Unless you heavily depend on Adobe or a very niche proprietary software you'll be fine. Install something user friendly like Linux Mint or Ubuntu and you'll be fine. If you stick to these distros, Linux is going to be really really easy.
Immutable distributions and/or NixOS is definitely something I have considered. Mostly as a learning experience, maybe NixOS is something that could be really useful for work. As an everyday desktop experience, I'm not sure it's the right fit... Maybe I'll replace the Arch Linux on my Macbook Pro. I barely use it anyway, something not rolling definitely makes a lot more sense.

Yep, I have been using it and it works great. I had to use the --disableAutogain true arguments, my SO talking in the background would spike the mic input levels but after using the flags I had zero issues.
In Portugal, pretty much everyone has access to this functionality. I think the functionality is amazing, I use it very often. The fact the cards only work once and have a spending limit really gives me a sense of security.
Revolut also has this functionality, I use it for purchases in foreign currency.
Never heard of privacy.com, I'm already set with the services that provide this functionality. I can't say if the service is good or not, but the practice of creating virtual credit cards is invaluable.
I was surprised to find that gaming on linux just works. Valve has done a wonderful job in improving proton.
