I've always considered it for my data not to be read by the company and it's employees but you bring up an interesting point.

I use futo voice input and can recommend. It runs perfectly without any internet access and am using it with OpenBoard as well.

The Apple case was decided by a judge and this by a jury, which makes a big difference

I use keepass but this is a great idea
