He did talk about session cookies/tokens in the video which is a possibility but I'm under the impression that this is not what happened since he was already aware of that possibility and didn't do anything to facilitate that.

Edit: I assumed porting out scam too but what confuses me about it was that his carrier line was still actively recieveing SMS and my understanding is that after a port out, the old sim becomes invalid/not working.
Maybe emulation? I never done it so no clue if it'll work
Edit: yeah can't really think of anything else that's isn't using a dedicated device like a phone for just video/audio calls or changing to different messenger. Hopefully somebody else has an idea

Edit: Assuming yes I usually suggest the t480 but that's like a solid 250-300$ on eBay and its only going to go up once win10 drops support
Edit 2: Based on your new criteria the t480 is still a solid choice for less than 400$ if you want something a bit newer but closer to the 1000$ mark look at the ThinkPad E14 Gen 5 hell I think even the dell xps 13 is 600$ right now too
I know you don't game but a dedicated GPU will be a godsend for video editing. Depending on the budget I would get a used gaming laptop like an Omen or a legion 5

Yubikey is kinda the gold standard IMO. Yes, I know google has their own titan something but the other one I know that can rival yubikey in terms of support and longevity would be nitrokey. Else I recommend making a poor man's security key using a keyfile and a flashdrive to secure your keepass database
Edit: forgot about nitrokey's overly sensational claims about a backdoor on Qualcomm chips a while back, that kinda stained my view on their company now. Just get a yubikey sure theres no firmware upgrades and whatnot but its good enough for now. Also heard good things about onlykeys
Is it dumb that I only backup my docs and anything else I think is important? I can rebuild fairly quickly if something would happen. I ask since I know that people backup a variety of their directories
