Hey when the app was introduced there was talk about it going open source after a while from the dev .
You could have added a "please" to your comment. The dev may decide to open it, but this kind of requests lack a bit of politeness.
Negative:Ask the community if they would be okay to move. If there is a big backlash, just stay there.Open the new community on the new instance, add the sidebar, the banner, everything to make it look like the previous one.Post the the old community a link to the new community. Lock the old community. Add a few posts to the new community to make the transition smoother

Sorry to hear. I might go to Feddit.it and ask them to configure their communities properly, you're not the first one raising an issue on their side
But the overall problem, is theyre not setting their language settings correctlyDefinitely. Both users and mods. If they would, there wouldn't be any issue.
For Spanish, I don't think that is much of an issue as there is only sporadic activity on !esp@lemm.ee and !spain@lemuria.es. I know that there is https://feddit.cl/, but those are mostly Chile-specific communities so I don't follow them that much.
With 0.19, you can even move your subscribe list in two clicks from the settings (you get a JSON file that you can import on another instance) without external apps
You can configure languages per community, every post in that community will automatically be tagged in that language. Example: https://feddit.de/post/9930318?scrollToComments=true.
