Zone of the Enders the Second Runner drops you into the midpoint of a fairly generic mecha anime plot, but as overseen by Hideo Kojima. It has a lot of "Dynasty Warriors" style "tear through hundreds of fodder with ease" gameplay, but also a very fast paced "attack/dodge/parry" system for fights against beefier enemies that ends up as this fast paced sort of rock paper scissors as you have to adapt to use the right technique to counter the enemy. You fly and can manuever very fast, attacks can come from any angle, and it's just flat out fun to control. There is a PC port/remaster of questionable quality (and no steam deck support), and a xbox 360 port of good quality, but it's mostly just uprezzed graphics that you'll get by emulation anyway.
It sounds like that's what happened, but through the proper channels. They hired a known CnC community/modding site admin as the dev.
I'd imagine he pitched that this was an easy way to reduce maintenance costs while fostering massive good will and making the amount of long tail sales over time higher.

I'm going to stick with some form of Firefox fork, personally. Chromium forks are questionable, as if I recall right they include a binary blob provided by google, which could be hiding god knows what.
Firefox is fully open source, so any code supporting this potential data harvesting can't hide, and will be removed by most forks.
If you've tried the Crash Bandicoot N-Sane trilogy, there are a few sequels of differing quality on PS2. I don't think any of them are particularly bad, but none are as good as the original PS1 trilogy (or the N-Sane remakes).

If you need flac, absolutely NO radio, and wired headphones... I'd look at old devices that support flashing the Rockbox custom firmware. You can probably find something used with over 128GB storage for under your price point.
Rockbox supports almost any audio type you can imagine (flac, mp3, wma, chiptune formats like spc and nsf, tracker formats like xm and it, anything). It beats out the old click wheel iPod OS in terms of functionality. Playlists, construct a temp playlist while listening to other music, shuffle the playlist, shuffle the queue, shuffle a subsection, play all songs, play albums, play all by an artist, play all in a genre tag, etc. Everything you could expect and probably more.

Rockbox is deeply customizable, but that also includes themes that mimic the default old school iPod OS or other old MP3 players if you want simplicity. It connects to a computer as a standard flash drive. No software needed for sync, no stupid MTP protocol making file transfers take stupidly long.
I think that it does support a few devices with FM radio, so you'd have to check that. The Sansa Clip Plus suggestion someone else made is one of the supported devices with FM radio. There's an incredibly slight chance it supports some device with Bluetooth, but take a look at the project site and tell me if you really think it does. I'd be shocked.
Also, probably outisde of your price range, but old iPod Classics don't have FM hardware, and up to 6th gen support flashing Rockbox as the OS. Apparently storage size limit is right at 128GB though, from a quick search. So you'd have less after the OS install. Would also probably have more available replacement parts like batteries and expanded storage mods. Either way you are probably looking at something used.
I have a hard time imagining there also isn't an existing small market for mp3 players for secure facilities or for prisons that would have devices with the limitations you're looking for. Probably not nice prices or feature sets though.

Somewhere in my comment history, back when Steam did their 2024 yearly awards I think, I called out someone who was trying to defend Balatro's RNG by saying that players and modders had proven that only 1 in 5 RNG seeds resulted in a truly unwinnable game on the max difficulty.
I don't know how true that is, but it definitely lines up with my anecdotal experience of the game.
That would mean that at best, playing 100% optimally (the RNG is deterministic, so the same actions on the same seed lead to the same RNG outcomes), with the ability to cheat by undoing your moves and by seeing the rng outcomes in advance... at absolute best you could only have an 80% win rate on the hardest difficulty.
I enjoyed Balatro, but that is cuckoo fucking bananas absurd.
The average player is not playing 100% optimally with full sight of RNG outcomes and an undo button... this is so beyond the realm of "just git gud scrub".

Sideload some open source games through F-Droid, set up a simple emulator frontend/app with a few age appropriate games. Lemuroid is a pretty straightforward emulator frontend with a decent UI for a kid to poke the boxart they want to play and just go, but I'm not sure how much you could lock it down to prevent them from borking the settings.
Lock the kid's access to the app store the fuck down. Install an on-device-vpn based adblocker like blokada or rethink dns to block ads across all apps on the device. It might break some games but the overwhelming majority will just fallback to "you don't have an internet connection" functionality at worst.
You can look up how to enable adb on the device, then plug it into your computer and use https://github.com/0x192/universal-android-debloater to remove/disable built-in apps you don't need. There's a ton you can do with adb to tweak the device, but uad is the most user friendly way.
If you want to push programming, others have mentioned a version of swift that's available on the kindle fire. Someone else mentioned Luanti as an open source minecraft clone, which I know is available through F-Droid (but can be quite janky due to not being made for phones/tablets).
That sounds like a software issue more than anything. You can "run" Doom entirely in a PDF document (by PDF supporting embedded javascript). Any ebook reader supporting that feature set of PDFs would be able to handle "full fledged" games.

Symlinks are possible in Windows (at least in NTFS filesystems) but to my knowledge they aren't used by anything official.
Windows's weird "psuedo folders" thing it does with "Documents" etc is something else entirely.

Yes, they allow full avoidance of any potential data collection through the browser, if they remove the collection features.
Mozilla would need to change their licensing terms to prevent forks from being able to remove things like that, and forks could just use the last version of the code before the license change and just backport new features.
Also Firefox is fully open source, unlike chromium which relies on a closed source binary blob in the middle. Some chromium forks have replaced the binary blob with open source code, but the default is for chromium forks to have a nice chunk in them controlled by google that no one can deeply inveatigate what it does. Firefox does not have this issue.
Mozilla can't hide any potential data collection in Firefox due to the full open source nature (unlike chrome forks). They also can't stop fork devs from stripping out any data collection functions. And as of today, they have not introduced any data collection that is not supremely anonymized, and they have not introduced any data collection that cannot be opted out of through the browser settings (and about:config).
