That's because you do not understand the philosophy. We are not using GNU/Linux because it is easier, we're using them out of idealism. In my opinion, it is worth sacrificing some comfort for the thing you believe in. And ultimately, every GNU/Linux user also leads to an increase in freedom for all the others, even the Windows or OS X evangelists profit from the hard work and lobbyism of the Linux community and the Free Software Foundation.
I'm not opposed at all to using LLMs for such purposes, however, please consider a solution that aligns with the values of GNU/Linux and the Free Software Movement. If you have sufficient RAM and a somewhat modern CPU, you can do inference on your very own machine, locally, with no connection to any external servers. And at very respectable speed.
I think that this is entirely dependent on the amount of money you're willing to expend. I'm sure that you can buy things that are much better or at least as well built as their counterparts from the past.
What exactly makes you think that? Strange New Worlds has very little action, and is loved by fans as far as I can tell. Yes, it has "personal drama", but Star Trek always had that and it's not a bad thing.

The probability for life to form has been computed over and over during the past century, incorporating ever more gains in scientific knowledge, and it is on the order of 10-100, meaning that there likely is no other life in at least our galaxy.
Individual cells do not encode any memory. Thinking and memory stem from the great variety and combinational complexity of synaptic interlinks between neurons. Certain "circuit" paths are reinforced over time as they are used. The computation itself (thinking, recalling) then is "just" incredibly complex statistics over millions of synapses. And the most awesome thing is that all this happens through chemical reaction chains catalysed by an enormous variety of enzymes and other proteins, and through electrostatic interactions that primarily involve sodium ions!
