I've done some of my home stuff this way, but I had to program it myself. Tasmota has some features which can be used without a server, but that's just for simple stuff like switches. For whatever reason (simplicity for non tech people?), out of the box products don't work this way.

I wrote my masters in LaTeX and while I appreciate the structuredness and the fact I could use vim, it was so quirky. Having to spend half an hour to fix a non obvious compile error, more than once, was a big distractor. I'm sure it gets better when you use it more but I don't think I have ever used it since. I'm not in academia and I don't need to solve compile problems when creating an invoice or writing a letter to local government.
It is very good test for the ability to research, I think. The amount of people who painstakingly went through some video tutorial on PHP and are now developers is insane. I'm sure there's place in the market for them (writing Wordpress themes/plugins, for example), but it's hard to find a programmer with ability to think these days. Not because people are more stupid, but because every other person is a programmer now.
Which model is that? I tried several ones that were complete trash, then Mixtrail appeared and starting giving answers that are very basic but mostly factually correct. But none of these are even close to ChatGPT that I can rely on with writing scripts.
Don't get me wrong, I'd rather not give them my data and money if there was an alternative. But for tech stuff we're not there yet.
I have emails going back to YAM on Amiga in 2002, some games I wrote for GBA and mobile platforms that don't exist any more. I have some old IM logs but reading that was so cringe I should delete it, with wipe not rm. Some of the obscure old music I have isn't available even on Soulseek (except when I'm sharing it). Source code of old programs I and my friends wrote. And photos, of course.
This prompted me to open Tempo I have installed from F-Droid but haven't used in a while, and the app crashed on startup. Logcat had the most unusual message:

look at efficiency. It's not always neglible, was like 40% of my energy usage because I oversized the UPS. The efficiency is calculated from top power the UPS can supply. 96% efficient 3kW UPS eats 4% of 3kW, 120 watts, even if the load you connected is much smaller than 3kW
look at noise level. Mine was loud almost like a rack server, because of all the fans.
I replaced that noisy, power hungry beast with a small quiet 900W APC and I couldn't be happier
Why do I hear the argument about no .desktop entries in every thread like this? Creating a .desktop file is a requirement for the appimage creation tools to work, and appimaged installs it in the system menu immediately. It's seamless.
I got my phone after 5 years of waiting too, it's a nice paperweight. I power it on twice a year, do a full update, play for an hour and put it back in the drawer.
Pine phone is a nice gadget but I don't think they contribute to software development as much as Purism does. Not that I recommend buying anything from Purism because of their business practices.
