One of my gripe as well, I wish the filenames were human-readable too on the local device, and of course with the filename encrypted along with the content on the sync target.
The only problem is that there isn't an iOS version, which can be a problem for some. But yeah, good luck to the autorities to block that.
And IMO if you're protesting, you may want to have a cheap Android phone you're willing to lose, with only the apps and data that you need (ie: F-Droid, Briar, Organic Maps, Ripple, Cryptomator with encrypted photo backup to the cloud). If the autorities takes it from you it will be of limited value to them, and you'll have your main phone safe at home.
Having my washing machine and dryer inside my home. After having lived in an appartment with a shared laundry room for 10 years, that chore isn't as tedious.
Personally I like Joplin (I even sponsor it on GitHub) but I'm left feeling as if the UI is unpolished and the navigation on the mobile app (Android) feels janky (ie: sliding from left to right doesn't always show the sidebar when I want it, etc.)
It is very close to what I exactly want in a note-taking app though.
From what I understand, it's mostly because they're forced to use WebKit, and building a compatibility layer to make the existing addons to work within iOS constraints on top of WebKit would need a significant amount of work.
My guess is that Mozilla is waiting on the engine restrictions to be lifted, but so far that will only happen in the European market with their alt stores.
Finally I use Folder Sync to keep all of the userdata files on my phone backed up to a folder on my server via SSH. Images are synced immediately on creation, and everything else is backed up on a schedule.
On a similar tangent, I use Syncthing-Fork on my phone to sync my userdata between my phone, desktop, laptop and VPS.
I use the untrusted device feature to encrypt my data with an additional password, which I entered on my phone, desktop, and laptop, but not on the VPS. That way I have an encrypted copy of my userdata that I securely store on my VPS for an extra layer of protection in case of a security breach.
