It’s an incorrect comment based on a real thing.
There was equipment with switched panning, but knob panning was so common it was referenced in diy electronic project books aimed at high schoolers.
There are some tube amplifier circuit types where the pan control actually changes directly what signal goes to what grid of what tube, and in those cases it would be useful to have switch instead of pot pan, but there were circuits to mitigate the problems and even tubes intended to take multiple grid inputs by that time.
Another comment explained how a person could work around that problem and get pot pan with split channels and they’re right.
One of the biggest reasons for switched panning was that it wasn’t always clear that you were going for a stereo effect! Often in the case of reinforcing a live band, you had some speaker cabinets for different frequencies and it would be stupid to send the trumpets to the big cabinet meant for the tympani!
Partial panning was also used in lots of the movie versions of stereo and multi source sound from over a hundred years ago so it’s not like switched panning was the only option or something
Switched panning is famously present on mastering machines though for the old (er than single groove stereo) two groove stereo record type.
So switched panning isn’t the reason for the wild mixing of the 50s and 60s, but it did exist.

My problem with the idea that we all ought to vote for some party whose policies and politics are far from our own in order to win isn’t that it denies the blossoming of everyone’s special flower ideas, but that it collapses all the effects of a third party into winning and losing.

You’re trying to get away from the high price of Apple hardware, not out of a general unwillingness to pay for expensive things, but because the ram and storage in the computers are no longer upgradable.
To do so you’d have to find bespoke solutions based on new software and systems you might not be familiar with and which mill most likely face loss of maintainers and updates some time in the near future.
That’s not a dealbreaker really, but the general trend in laptops is moving away from replaceable memory. Sure at the moment you generally can still replace the disk, but for how long? Are you thinking that apples ahead of the curve on system on chip devices or that they’re making a misstep? Personally I think anyone your age or mine will have a hard time buying new computers that don’t have everything built into the board or processor before we shuffle off. I could be wrong though.
Let’s say it doesn’t matter though, just in dollars amortized over the life of the hardware, how much are you really saving by upgrading the memory and storage?
I tend to run five + year old macs and for the oldest ones, the 12 year old MacBooks, I got lots more life out of em by doubling the installed memory to 16gb and going from hdd to ssd. How much money was really saved though? Maybe ten bucks a month at the most.
Are you keeping em for fifteen years or cycling out every five or so?
Newer Macs which already have ssds don’t see near the stark performance change that we probably both wowed about when going from hdd to ssd.
You’re not really listing any software or operations in your post that would make upgrading the ram from the (maybe?) current 8gb minimum to anything more seem worthwhile.
It’s not that I don’t think a person could do what you want to do under Linux, just that it doesn’t seem like something you ought to pursue when weighed against the relatively low cost of just staying with the system you’re using considering the computers themselves will hold value better over time than anything you might swap out to.
The early days of stereo (which is what you’re talking about, the recordings of 70s which aren’t using stereo as an “effect” almost universally have the vocals panned to the center. The old way to take the vocals out of a recording was to adjust how much of the signal present equally on both channels was allowed to be played) were all about two things: backwards compatibility with mono systems and giving people with stereo systems a recognizable effect no matter what goofy system they had.
Wild panning accomplishes both goals.

You need to know what you have. Other people have teased out that you have a MacBook Air, but there’s several different versions.
Apple hardware for like twenty years has used two types of naming conventions, the Trade Name (Approximate Date) and the Trade Name Number,Number designation. You might have a MacBook Air 7,1 for example which is an Early 2015. The TN N,N is the model Identifier and the TN (AD) is the model.
You can find out what you have by clicking on the apple menu in the upper left hand corner and choosing “about this mac”. The window that pops up will tell you the model and if you click “system report” you will get a ton of information that should have the model identifier somewhere near the top.
You can also look up the serial on the website everymac.com and it’ll tell you a best guess which is almost always right!
Once you’ve done that you can much more effectively search for the pitfalls of installing Linux on that computer.

Buy unlocked. It’ll cost more and you won’t have the option of doing the carrier/manufacturers no interest payment system, but that’s what it costs to actually not be locked into a particular carrier for the foreseeable future.
My actual advice about phone choice is to learn the unjailbroken ios way of doing things because what you’re asking for in your post knocks out a lot of the more specific things people recommend on android devices and pushes you to smaller or not privacy focused roms.
You’re not auditing the code so you need the most eyes on it that you can get so running smaller or less privacy oriented software becomes more of an issue.
If you haven’t already, make a threat model and see if/how that changes your requirements and desires.
