you can stop and start it via systemctl and systemd is going to make mounts for fstab entries automatically, I just put local drives in my fstab so that way I can copy mount files between machines
ram is really the limiting factor for most servers
if you're gonna have less than 5 users on the services they're probably not all going to be used at the same time so cpu usage will depend on which are being hit at the moment
none of the services you've listed are particularly heavy so you'll be good for those and a bunch more no problem
I'm not sure how it actually does it but I'd assume it takes the first like 10 posts from all instances then orders them by the sorting method, and then loads more as needed
