Honestly, its personal preference, there's different forks of each, base Firefox is good, if you want a more private fork try Fennec or Mull. With chromium the only two ive heard good privacy things about is Brave and Cromite (a fork of Bromite, a project that looks like it got discontinued as there hasn't been an update since last December). Honestly try both and see which you prefer.

For Apple, Safari is decently private, Apples strong suit is that everyone knows Apple hate sharing things, so while you can't be sure about how much apple collects, you know they're not giving data to 3rd parties.
For computer I'd say base Firefox, (or Librewolf if your okay with the lack of auto updating) or Brave.
The concern with Session is that theyre based in Australia, a country that is in the 5 eyes, and their government passed a bill
forces companies to provide a backdoor when ordered to, the company cannot deny to create this, and they can't declose that they got ordered to ether. [A great video talking about said bill] While the Session devs say their services are resilient to these threats, [see their FAQ] it's best to remain cautious.
I've got a 2019 Kidle Oasis, I dont know if it has epub support but I use a piece of software called Calibre which can convert epubs to mobi which I think is Amazon's proprietary format. Haven't done it for a while now but I think there's a problem with book covers now? Not too sure.
I've always had sloppy handwriting, but I had to handwrite a note for someone and I've never seen my handwriting so neat! I've not had to write anything with a pen or pencil for at least 2 years. But all of a sudden, its clear, neat and legible, even my cursive is pretty clear too!
