I don't think LOS has any privacy/security improvements over the stock android? (IIRC) it's even worse than stock because you can't lock the bootloader after installation.Though if your phone isn't getting official updates, it's probably safer with LOS.
Wasn't there also a "kill-switch" that reported to the government when you tried to tinker with the OS too much or something?
You could use "Alpaca" flatpak and remove the internet access with flatseal after having downloaded the model. (Linux)Or deny the app's access to internet in app settings. (Android)
