  • So a few years a go, an old friend i was visiting asked if i wanted cream in my coffee. She checked the upstairs fridge, then went downstairs and came back with glass of milk. Halfway through my coffee i started to wonder why she was hiding a grin. Yes, she had a three month old.

  • The first time i saw North by Northwest, it was a little jarring realizing Hitchcock basically invented the modern action/suspense/thriller genre with that wonderful movie. So many references suddenly made sense.

  • In a very specific scenario, with a very large amount of running the numbers, as a high income person with low personal expenses and a very good investment advisor, I could see how in certain situations/locations where mortgage rates are much higher than rental rates, that you get better fiscal results investing than paying that mortgage. That was a very rare situation 7 years ago, even more rare now. Where I lived ten years ago, I could not possibly afford the mortgage but I could the rent. These days there the situation has reversed and they're both sky high regardless.

  • My understanding was both Mark Knophler and Axl Rose were doing the same thing, writing a song from a dumbass bigots perspective, it's just that people hate Axl and automatically ascribe the worst motives (despite a literal black man playing guitar on that GNR track).

  • fucked if i know, none of that sounds right and it lists "rennet" as a type of soft cheese. EDIT: I looked into it. I know how to make cheese the traditional way. Commercial cheese making has gotten strange, and this article is fairly, but not completely accurate, as regarding modern methods, some only a few years old.

  • Traditionally is done by heating, separating and the introduction of rennet, which is an enzyme from calf guts that converts milk into a solid form that a herbivore can digest. This relates to why cows milk kills human infants and kittens but they can survive on goats. Cheese basically dates from ancient times when everyone was lactose intolerant but some farmer noticed how calves digest milk.
