I think the app is fine but finally I continue to use FreeOTP+.

I am using Tutanota as my e-mail provider and it's quite OK.

I am happy with my Epson consumer device, it works out of the box.

Just be aware what you install. Check the developer name and the whole path.
Some apps on F-Droid are limited for example but you can download the full featured app from Github. Later updates are anyhow cryptographically signed.

You can already do a lot!. Switch of all the invasive features from google. (Remove advertising ID, switch of any web and app history etc.) Install F-Droid and only use the "good" apps. Put the evil apps in a separate work profile (Shelter app). Look at the configurations of the apps and opt-out of tracking.
Configure your webbrowser to delete cookie and co. ....
