It's funny how some cats will constantly enter your personal space but act so offended when they want to be alone. God forbid I try to pet her when she doesn't want to be touched, but she shoves her head under my hands while I'm doing something else.

That's not a problem with the cat, that's either a problem with the owner (for not socializing them properly) or a problem with you (for ignoring their requests to be left alone).

What would have stopped them from just collecting the data in their own stores, and then developed the tech?

I won't pretend that Amazon avoided that due to ethical concerns, but doing that would have almost the exact same ethical concerns.
