I agree with this, for anyone at even a beginner level fredora is pretty great! I've used it many times for hosting servers, it's pretty reliable and isn't going away any time soon

Any thunderbolt dock will do, all depends on usecase. The deck doesn't require any special software or anything to dock. It's all plug and play.

Can't say I've ever tried to use "remote play together" with a game through proton. Does RPT work for you on other games? And what version of proton are you on?
