what could possibly happen that the mayor of NYC is going to do that causes issues for the rest of America? I'm at a total loss to why the federal government is concerned about. Someone please help me understand as I haven't been following this topic too closely.

Soda steam (and similar products) have likely saved a lot of plastic bottles from being purchased. This product doesn't save money, I think it'll should work out to the same costs for anyone that drinks a lot of bubbly drinks.
My tip for those starting away from instant is to get the aeropress as it's a pretty low cost of entry and doesn't take up much space. Get the XL if you need a larger cup. The V60 is affordable as well, but you'll need something to pour the coffee with. Good luck on your journey.
