Vegetable curry is a thing. Since they didn't have to wait for meat to cook through, they were also able to barely cook the veggies, leaving them vibrant and bitey. Obviously over the course of the day you need a balance of protein but it doesn't have to be in every dish. The rice and seeds here are a good start.
